Description
Characteristics and Tasting Tips for the Saint-Véran Village "La Combe Desroches" 2023 from Domaine de la Soufrandière
Tasting Notes
Colour
The wine reveals a very pale straw-yellow hue with green highlights, a testament to its freshness and youth.
Nose
The nose, delicate and restrained, opens with notes of yellow apple and pear skin, accompanied by touches of green hazelnut. Richer nuances of salted butter and beeswax complete the bouquet, set against a backdrop of minerality reminiscent of wet chalk.
Palate
On the palate, this wine charms with juicy, richly textured fruit, carried by a fresh, broad acidity. A light phenolic texture traces along the gums, adding definition, before a saline and delicately spiced finish, clean and precise.
Food and Wine Pairing
This Saint-Véran pairs beautifully with white meats served with creamy sauces and mushrooms, as well as delicate fish and poultry.
Serving and Cellaring
The Saint-Véran Village "La Combe Desroches" 2023 is best served chilled, at a temperature between 10 and 12°C. As no official cellaring information has been provided by the estate, it is recommended to enjoy it in its youth to fully appreciate its freshness and precision.
A Fresh and Precise Saint-Véran
The Estate
Domaine de la Soufrandière is a family-owned estate in the Mâconnais, in Burgundy, based in Vinzelles. Now run by brothers Jean-Guillaume, Jean-Philippe and Jean-Marc Bret, the estate practises rigorous organic viticulture. Recognised as a benchmark in southern Burgundy, it cultivates plots spread across several Mâconnais appellations, including Saint-Véran, from which it produces precise, characterful cuvées, such as "La Combe Desroches".
The Vineyard
The Saint-Véran "La Combe Desroches" comes from a Chardonnay plot set in a cool combe with a due north exposure, at the foot of the Roche de Vergisson. The soils, composed of marly clays, give the wine its characteristic minerality. This combe setting, cooler than most of the surrounding terroirs, promotes harmonious ripening of the grapes while preserving acidity. The vineyard is farmed organically, with hand-harvested grapes.
Vinification and Ageing
The Saint-Véran Village "La Combe Desroches" 2023 is made from whole-bunch pressing, followed by spontaneous fermentation using the indigenous yeasts naturally present on the grapes. Ageing lasts approximately eleven months, mainly in stainless steel tanks, complemented by a portion of old barrels, in order to preserve the purity of the fruit without any oak influence. A light filtration is carried out before bottling.
Grape Variety
100% Chardonnay.
