Description
Characteristics and Tasting Tips for the Auxey-Duresses Village "Les Hautés" 2025 by Jean-Charles Fagot
Food and Wine Pairings
This white wine pairs beautifully with shellfish, raw or cooked, as well as white fish prepared with butter and lemon. It also complements roast white meats topped with a light cream sauce, and vegetarian dishes such as ratatouille or mushroom risotto. Cheese lovers can enjoy it with a pressed cheese such as Gruyère or a mature goat's cheese.
An Auxey-Duresses Village shaped by the minerality of the Les Hautés lieu-dit
The estate
Founded in 1920 in Corpeau, in the heart of the Côte de Beaune, Jean-Charles Fagot is now run by Jean-Charles Fagot himself, the third generation of the family to lead the estate since the late 1980s. He cultivates around three to four hectares of vines between Corpeau and Chassagne-Montrachet, following the principles of lutte raisonnée (sustainable viticulture) and harvesting by hand, and complements his production with a négociant-éleveur activity. Also a restaurateur since 1998 at the Auberge du Vieux Vigneron, he is a singular figure in Burgundy, where viticulture and gastronomy complement one another.
The vineyard
The Auxey-Duresses Village "Les Hautés" cuvée comes from a hillside terroir at an altitude of 280 to 300 metres, close to wooded areas that foster a cool microclimate. The vines, around fifty-five years old, are planted in the marl and limestone soils characteristic of the Côte de Beaune, which give the wine its tension and minerality. The vineyard is farmed following the principles of lutte raisonnée (sustainable viticulture), with grapes harvested exclusively by hand.
Vinification and ageing
For the Auxey-Duresses Village "Les Hautés" 2025, as for previous vintages of this cuvée, the grapes are gently pressed to preserve the aromatic purity of the Chardonnay. Fermentation takes place in neutral vessels, after which the wine is aged in 228-litre oak barrels before further maturation in tank, a method that adds texture without marking the wine excessively with oak.
Grape variety
100% Chardonnay.
