Description
Characteristics and Tasting Tips for Dom Pérignon Rosé Vintage Damien Hirst Limited Edition 2010
Tasting
Appearance
The Rosé Vintage Damien Hirst Limited Edition 2010 reveals an elegant, deep and luminous pink hue, shaded with coppery highlights. A fine, persistent mousse animates the glass, a sign of long maturation on the lees.
Nose
The nose opens on beautifully ripe fruits with tropical accents, before unveiling vibrant red fruits and generous flesh, somewhere between quince and chocolate. Fresher notes then emerge, and the whole finishes on soft spices, cardamom and vanilla.
Palate
The palate captivates with a power that remains light, combining intensity and precision. It is delicate, dense and silky, carried by a grainy texture and zesty, saline bitterness. The remarkably seamless finish unfolds with elegance and majesty.
Food and wine pairing
This rosé champagne is a superb companion to seafood and saline flavours, such as raw fish or sea urchin, as well as to vegetables with bitter notes, such as artichoke. It also pairs very well with richer, more robustly seasoned meats, such as spiced pork belly or duck breast with black olives, which highlight its structure and aromatic depth.
Serving and cellaring
The Rosé Vintage Damien Hirst Limited Edition 2010 has already benefited from some twelve years of cellar maturation before its release, which already gives it great aromatic complexity. It can be enjoyed right away, under the best storage conditions.
A Dom Pérignon rosé champagne of radical power and timeless elegance
The estate
Dom Pérignon is the prestige champagne brand of the house of Moët & Chandon, created in the 20th century in tribute to the Benedictine monk Dom Pierre Pérignon, cellarer of the Abbey of Hautvillers between 1668 and 1715. Today part of the LVMH group through Moët Hennessy, the house draws its grapes from more than 3,500 acres of vines spread across the finest terroirs of Champagne. Vincent Chaperon, the chef de cave, oversees its creative direction, upholding an uncompromising standard: Dom Pérignon produces only vintage cuvées, and only when the year allows.
The vineyard
The grapes for this cuvée come from the finest terroirs of Champagne, including the seventeen villages classified as Grand Cru as well as the Premier Cru of Hautvillers, the only one permitted in the blend. The vines thrive on the chalky slopes of the Montagne de Reims, the Côte des Blancs and the Marne Valley, an environment listed as a UNESCO World Heritage Site. This mosaic of limestone soils and varied exposures offers pinot noir and chardonnay ideal conditions for slow ripening and aromatic concentration.
The vintage
The year 2010 began with a particularly cold winter and spring in Champagne, delaying the vine's growth cycle. The summer proved warm and dry, favouring fine ripening, before intense rains in August brought botrytis to the pinot noir. A rigorously selective harvest made it possible to set aside the affected bunches and keep only the healthiest grapes, giving rise to a balanced vintage rich in contrasts.
Winemaking and ageing
The Rosé Vintage Damien Hirst Limited Edition 2010 is crafted using the traditional Champagne method, with a first fermentation followed by a second fermentation in the bottle. The wine then undergoes a slow and masterful maturation in the cellar of some twelve years, allowing it to develop its full complexity while preserving the balance between power and lightness sought by the house.
Grape varieties
This cuvée combines 55% pinot noir, which gives it power and structure, with 45% chardonnay, bringing freshness and precision to the whole.
