Description
Characteristics and Tasting Tips for Triologie KM2 by Clandestin
Tasting
Colour
The colour is a light golden yellow, subtly brightened by salmon-pink glints, with a fine and persistent mousse.
Nose
The nose combines a ripe fruit expression, reminiscent of fully ripe white and yellow fruits, with pastry-like touches of brioche and lightly toasted bread. Sharper mineral nuances complete the bouquet, adding freshness and depth.
Palate
The palate strikes a balance between body and energy: the attack is fresh, supported by lively acidity, followed by a mid-palate that is generous without excess, where mineral tension gives structure to the whole. The finish, savoury and saline, bears witness to the imprint of the terroir, with good length.
Food and Wine Pairing
This Champagne is an ideal match for seafood: oysters, shellfish, raw or lightly seared fish, scallop carpaccio or fish tartare. Its balanced body also lends itself to pairing with roast poultry or fish in a light sauce, where the wine brings both richness and definition.
Serving and Cellaring
This Triologie KM2 NM is ideally served between 10 and 12 °C, in a tulip-shaped glass that allows the finesse of its bubbles to be fully expressed. Its ageing potential is notable, depending on storage conditions.
Clandestin, a Geological Exploration of the Côte des Bar
The Estate
Champagne Clandestin is a collective of winegrowers from the Côte des Bar in the Aube, founded in 2009 by Bertrand Gautherot (Domaine Vouette & Sorbée) and Benoît Doussot (Doussot père & fils), later joined by other winegrowers. This micro-négoce works with growers committed to environmentally respectful viticulture to vinify plots that were long overlooked. Clandestin stands out for its exacting, plot-by-plot approach to the Champagne terroir and its pursuit of purity of expression.
The Vineyard
The grapes for this cuvée come from plots located in the Côte des Bar. The vineyard is planted on soils dominated by marls of Kimmeridgian origin, characteristic of this southern part of Champagne, with vines tended in a way that respects natural balances and harvested by hand.
Vinification and Ageing
This Triologie KM2 NM is crafted from spontaneous fermentations carried out by indigenous yeasts. It is aged on fine lees prior to disgorgement, with the aim of preserving the personality of the terroir and aromatic precision, with minimal intervention in the cellar.
Grape Variety
100% Pinot Noir.
